Dr. Karan Rajan, a UK-based surgeon and health content creator, shares a simple, nutrient-dense bread recipe that promises wholesome indulgence without compromise.


The Ultimate Homemade Bread


Dr. Rajan’s recipe takes just 30 minutes to prepare and is rich in protein and fiber. Each slice contains 10 grams of protein and 6 grams of fiber, made with just eight ingredients and no protein powders.


He emphasizes the nutritional value and health benefits of each ingredient as he adds them, noting that this recipe can be made in batches and frozen for later use. Reheating the bread after freezing helps develop resistant starches, which are beneficial for gut health.


Ingredients:

  • 3/4 cup of plain Greek yogurt (150g)
  • Warm water
  • 8g yeast
  • 500g bread flour
  • Pinch of salt
  • Pinch of sugar (brown or white)
  • Extra virgin olive oil
  • 2 doses of prebiotic fiber supplement
  • 50g pumpkin and sunflower seeds

Method:

  • Start with warm water and add Greek yogurt; this adds protein and improves digestibility.
  • Add yeast and a pinch of sugar to activate it; set aside for an hour.
  • In a separate bowl, mix bread flour and salt.
  • Incorporate the prebiotic fiber supplement, which contributes additional fiber.
  • Add the activated yeast mixture and knead until you have a soft, sticky dough.
  • Grease a bread tin with olive oil, which provides anti-inflammatory benefits.
  • Transfer the dough to the tin and allow it to rise in a warm place for 1-2 hours.
  • Brush the top with a flour-water paste, then press the pumpkin and sunflower seeds onto the dough.
  • Bake at 200°C (400°F) for 30 minutes.
